Weighing in...

When I was on a mission to lose weight for Belize last year I started out at 138 lbs. and dropped down to 133 lbs for the trip.  Well needless to say I had packed on the pounds again.  Yup that's right I went right back to 138 lbs.  My pants were fitting tighter and my shirts were showing off my beer baby but I refused to buy bigger clothes!  Around June 2011 (still at 138lbs.) & decided I was done being flabby and set a weight loss goal of 125 lbs.  I started to walk with one of my friends.  We would walk 5-7 miles every other day and hit the gym on days we didn't walk.  When it came to July/August I had decided to change my eating habits.  That's when I read "Skinny Bitch" by Rory Freedmand and Kim Barnouin.  Wow was it a wake up call to what we are stuffing our faces with.  I was completely disgusted and went strict vegan for about 2 months but kept up being a vegetarian the rest of the time.  I eventually started to run again and was running 8 min. miles and doing 3 miles every morning.  By October I had lost a total of 15 lbs., I was 123 lbs.!  I stopped running around November due to the crazy holiday schedules and started to eat and eat a lot!  I even started to eat meat!!!  Much to my surprise when I stepped on the scale on January 1st I weighed in at 126 lbs., that was only 1 lb. over my goal!  On Jan. 3rd I had decided to start juicing every day.  I quickly dropped those 3 lbs. I had gained over the holidays (that honestly only made me feel bloated) and now I'm back down to 123 lbs.  I am extremely happy with where I am at.  I am wearing size 3 jeans and the only thing I am focused on is getting back into shape.  I am slowly starting to run 3 miles in the morning (not every day yet) and I started to play soccer again (boy does that make me feel old, haha)!  And I still love food!

What a difference a year makes!  I have decided to start posting some yummy recipes (healthy ones and every now and then not so healthy ones).  I think its okay to indulge and reward yourself every now and then, just not on an everyday basis.

Tasty Treats...

Happy Thursday!  Since I have been eating vegetarian I've been trying new recipes.  This is a new one that I have never tried and it was so delicious even one of my best friends loved it!  I make a lot of roasted veggies through out the week that I can use them in different recipes...use as much or as little ingredients depending on the amount of food you are making.  If you have left overs use them the next day!  Here's the how to...

STUFFED PEPPERS

Ingredients:

  • about 2 Tablespoons of Extra Virgin Olive Oil or Canola Oil
  • Asparagus (chopped into bite sized pieces)
  • Bell Peppers (Red, Orange, Yellow-chopped)
  • Mushrooms (Baby Portabella-chopped)
  • about 1/2 Cup of Shredded Cheese (use vegan or skimmed mozzarella for healthier versions-or you can top with bread crumbs instead of cheese)
  • about 1 cup of cooked Couscous (cook per packaged directions)
  • Regular Red Bell Peppers (halved length wise with stem, ribs & seeds removed
  • Kosher Salt (to taste)
  • Freshly Ground Pepper (to taste)


Preheat oven to 375 degrees.  On a cookie sheet place chopped asparagus, bell peppers & mushrooms.  Sprinkle with about 1-2 tablespoons of extra virgin olive oil or canola oil, sprinkle with kosher salt and freshly ground pepper.  Toss to coat all veggies.  Spread on cookie sheet evenly and bake for 15-20 mins tossing once half way through.

Once veggies are done, in a bowl, mix with pre cooked couscous.  Spoon your couscous veggie mixture in the red bell peppers that have been halved length wise.  Top with cheese or bread crumbs (both optional), place on cookie sheet or in baking dish & bake in oven at 350 degrees for 15-20 mins.

It's a pretty versatile recipe that you can add or omit any kind of veggies.  You can even use quinoa instead of couscous.

Guilty Pleasures...

I have a confession to make...I AM A REALITY TV JUNKIE!  It is truly one of my guilty pleasures.  I honestly watch tons of reality TV that I can't even name all the shows that I love.  Now, I'm not one of those crazy people that TiVo every single show, but if its on and I'm home to watch it, I will watch it!  One of my favorite shows right now is on Lifetime called "Dance Moms".
This show is insane!  Abby Lee (the owner of the dance studio that this show takes place in) is PSYCHO! I cannot believe how she talks to some of these little girls.  The mothers are all CRAZY and the daughters are so innocent.  Some of the things that come out of these ladies mouths make me laugh & I can't get enough of it.  Thank you Lifetime for a guilty pleasure that I enjoy every week!

Things that make me smile...

As most of you know I am a mother of 3 very active boys.  They are 8, 5 & 3 years old.  I had originally started a private blog of just them that only immediate friends & family were allowed to read but it became hard to keep up with 1 blog let alone 2.  So I decided to post about my kids on this blog.
This past weekend my littlest guy, Luc Cristiano, made me laugh so hard I had to share....

Tasty Treats...

As promised, I want to share with you a yummy delicious and healthy snack that you're just going to gobble up...KALE CHIPS!  I made these this past Sunday for my family & everyone LOVED them!  I even have 2 of my friends who have already made them!  Here's the how to...

KALE CHIPS

Ingredients:

  • 1 bunch of Kale
  • about 2 Tablespoons of Extra Virgin Olive Oil
  • Kosher Salt (to taste)
Preheat oven to 350 degrees.  Wash the kale thoroughly and make sure to dry it completely (I actually used my salad spinner to help dry my kale).  Next rip off the leaves from the rib/stem of the kale into 2-3 inch pieces and place on a cookie sheet.  Sprinkle with extra virgin olive oil and kosher salt, toss to coat evenly and bake for about 10-12 mins turning about 1-2 times during baking.  Let cool completely and enjoy!

1). wash kale

2).  dry completely 

4).  rip off stem and sprinkle extra virgin olive oil & kosher salt

5).  enjoy!

I Want It Now Wednesday!

Happy Wednesday!  I finally got around to checking out the Anthropologie catalogue last week and oh boy, I fell in LOVE!!!  I wanted to rush to Anthro last weekend, but of course I was a good girl and didn't go.  I have to get my hands on these and I have to get them soon!

The Bike Lane Dress is the dress that I HAVE TO HAVE!  It would look so cute with gray or tan pumps a cute red or navy cardigan, Toms, Flip flops!  You can totally dress it up or dress it down....Eeek, I absolutely love it!!!  The Dropped Dots Dress reminds me of a total Lucille Ball's dress, but I love it!  I love polka dots and I've been searching for a cute polka dot dress but have never been able to find one, well I have to look no further cause here it is!  I hope to go this week to at least try them on and see which one I might buy!

The truth about being a VEGETARIAN...

One of my goals for 2012 is to be a vegetarian for the entire year and hopefully make the change for the rest of my life.
While I was pregnant with my 3rd son I had developed a hernia and I started to have digestive problems.  My doctor right away wanted to do surgery to fix my hernia but I didn't feel or see the need to have surgery so I laid off meat for a couple of months and guess what I was feeling great again.  But I fell back to my old ways and started to have problems again!  So this time I decided to make the change and educate myself.  I had no clue what a "Vegan" was or what "Vegetarian" really meant.  I bought a book, watched tons of documentaries and googled the poop out of "Vegan vs. Vegetarian".  It was big eye opener as to what we are really eating and putting in our bodies!  Hormones & pesticides YUCK!  Aside from that I was horrified to find out how animals are treated and slaughtered just so humans can gorge themselves with the only protein we have be taught to consume.  So I went Vegan for 2 months straight but the holidays came & being Hispanic & a baked goods LOVER it is pretty darn hard to just say no to Animal Products.  However, those 2 months were a testimony that I can do this &  that animal products are just not right for me and my body.

Therefore, I have devoted myself to not eat meat for the entire year because 1). I feel that an animal should not have to die for me to eat & 2). My digestive system, energy & skin feels awesome when I do not consume any MEAT or milk.

It has been 16 days since I have consumed any meat, milk or eggs.  I use vegan butter instead of regular butter and eat tons of organic fruits and veggies.  This leads me to my next fun chapter of my blog, I have decided to share & post some recipes for you.  I love when people share and I love to share with people, so stay tuned this week for more post on some yummy foods!!!

Things I Adore...

Sucias!  Well as most of you know I Love to shop (most of the time) & I Love things that are simple and make sense.  Granted, I try to be frugal.  I usually buy things when they are on sale or clearance.  But  I do buy things at full price when the price is right or it is absolutely necessary!  
One of my most recent purchases were some Toms.  I absolutely ADORE Toms!  They are made with very little  resources and hello, with every pair you buy Toms gives a pair to a child in need!  How awesome is that?  I actually got my first pair of Toms in May for Mothers Day & I got a little crafty with them and this is what I got...

Not only do I wear my heart on my sleeve but I wear it on my shoes too!  Yes, I painted them with My Dodger Blue!  And I don't only wear them to the games, I throw them on with Jeans and T-Shirts, my favorite things to wear!  
Well for Christmas I received a gift that I really didn't need or like so I made an exchange at the store and came home with these two bad boys...

A New Year, A New Me!

Happy New Year! I cant believe it's already 2012 & I am making a new start. I know I have neglected this baby for too long, but I have my creative juices flowing & I'm excited to start writing/blogging again!
I wanted to start off my 1st post of 2012 with my new year resolution or what I am going to call them, my new year goals. I honestly NEVER make new year resolutions, I always thought they were stupid. But this year I have a change of heart. And I want to share them with you...

Resolution #1
Be a vegetarian for the whole year

Resolution #2
Maintain my goal weight & exercise 3 times a week

Now that I wrote them down I know I will have a better success rate!
